SOWL Challenge #2: Try one new vegetable and one new fruit

The Summer of Weight Loss challenge #2 is to try one new vegetable and one new fruit.  I am week behind since I just found the challenge on July 13th!  I finished the first challenge on July 14th so I'm really behind.  I've been focusing more on my fitness progress than nutritional aspects.  I have just been sticking to healthy diet options, and fueling and recovery for runs. 


So I went shopping and here is what I found.  I haven't tried them yet but I wanted to post what I found to try.   I love to cook so finding recipes to enjoy them will be fun for me. 


This first thing I found was Bok Choy.

I read that bok choy is light, has a sweet flavor, and crisp texture. It is also high in Vitamin A, Vitamin C and calcium, but it is low in calories. I think I'll try this Spicy Bok Choy in Garlic Sauce. The introduction to this recipe suggests serving with grilled shrimp and steamed rice.  Yum!  I might have found dinner tonight!


Then I found a Canary Melon.

Oh my! I think I'll try the Canary Melon and Banana Fruit Smoothie.  I read that canary melons provide vitamin A, vitamin C and dietary fiber. This sounds actually awesome after my morning run tomorrow!



Then I saw this Jicama.

What I read is that jicama contains a high amount of vitamin C, is low in sodium, and has no fat. One  serving or 1 cup of cubed jicama contains only 45 calories.  That's cool! Now I need to find a recipe.  I'm thinking of this simple Jicama Chili Sticks Recipe. This might be good as a lunch snack tomorrow.


Oh boy, I'm excited at my finds!   I love to try new things so this challenge was difficult, there were so many vegetables and fruits I've already tried. I can't wait to get cooking!

  1. I love bok choy, especially the baby bok choy (usually you can find them at the Asian grocers). Add a little oil to coat the pan a little, fry some garlic and throw in the vegetables. Add seasonings, and serve over rice.
    Try Napa Cabbage too. They are light and tasty.
